Marinated Stuffed Portabella Mushrooms

Ingridients of Marinated Stuffed Portabella Mushrooms:

• 6 portabella mushrooms , stems removed and reserved for stuffing
• 1/2 cup chicken broth
• 1/2 cup honey
• 1 cup red wine
• 3 tablespoons balsamic vinegar
• 1 clove garlic , minced
• 1 cup olive oil
• 2 tablespoons chopped fresh herbs (sage and thyme worked well)
• 1 pinch salt
• 1 pinch black pepper
• 1 tablespoon olive oil
• 1/2 lb ground chicken (or Turkey)
• 1 1/2 cups hot cooked brown rice
• 1 tablespoon chopped sage
• 1/2 cup diced celery
• 1 small onion , diced
• 2 cloves garlic , minced
• 6 tablespoons parmesan cheese
• 1/2 teaspoon salt
• 1/2 teaspoon fresh ground black pepper
